Kaiser Foundation Health Plan has approved a grant of $70,000 to support “Cooking Up A Rainbow,” a Health and Wellness Food Truck that combines the services of Kapiʻolani CC’s Culinary and Health Sciences Programs.
The grant was awarded to purchase a food truck which will serve multi-purposes six days of the week throughout the year:
Monday – Thursday, Parking Lot A: serve as a food outlet operation for the healthy food needs of faculty, staff, students and the public at Kapiʻolani CC, Lēahi Hospital and Diamond Head Health Center.
Friday and Saturday: serve as a mobile Health and Wellness Center that will travel to select locations to provide lessons on healthy cooking by the Culinary Department and to provide health/wellness screenings and information from the Health Sciences Department.
Monday – Friday during the Summer: serve as an additional vehicle for Kapiʻolani CC’s USDA-funded Summer Food Service Program in order to better accommodate increased numbers of underprivileged children needing food assistance.
Evenings – The food truck will participate in various events that promote delicious, healthy, and locally-sourced cuisine.
The Health and Wellness Food Truck will be available in 2017 after the procurement process is complete and after the truck is outfitted with service requirements.
